What is Whey Protein

Milk is made of two proteins, casein and whey. Whey protein can be separated from the casein in milk or formed as a by-product of the cheese making process.

The liquid whey is separated from the casein and sent through micro filters to remove all non-whey ingredients (lactose and fats) and trap the beneficial micro-organisms (amino acids). Isolates are then purified in an additional process called "cross flow microfiltration" or "ion exchange".

The water from the remaining whey compound is then removed by turning it into powder using a drying tower.

The quality of the whey protein is highly dependent on the cows from which it is sourced. Cows which have a grass based diet have a higher concentration of healthy fats and quality proteins compared to cows fed on conventional feed.

All proteins are graded using a BV (Biological Value) scale with better quality proteins having higher rankings. Compared to conventional sources of protein such as eggs, fish and meats whey protein has a much higher BV per relative volume.

How is whey made?

Whey protein isolate is derived directly from skim milk using microfiltration techniques which remove completely all of the lactose and fat content which is present in milk.

During cheese making, casein coagulates into curd and settles to the bottom, while whey remains in liquid form. When this liquid is drained off, dried and processed, we are left with whey protein concentrate.
